My love for chicken and Mexican food continues this week!

fajita stuffed chickenHere is what you’ll need to make the fajita stuffed chicken:

(1 Tbsp.) olive oil, for the veggies

(1) pepper, diced

(1) onion, diced

(1 tsp.) salt

(1 tsp.) pepper

(4 ounces) cream cheese

(1/2 cup) shredded cheddar cheese

(2) boneless chicken breasts

(1 tsp.) salt

(1 tsp.) cumin

(1 tsp.) garlic powder

Salsa, sour cream, and guacamole for serving.

  1. Preheat the oven to 400 degrees. Heat the oil in a pan over high heat. Cook the peppers, onion, salt, & pepper until soft and slightly caramelized. Transfer the cooked veggies to a bowl.
  2.  In the same bowl, mix in the cream cheese & cheddar cheese, stirring until evenly incorporated. Set aside.
  3.  On a cutting board, slice a pocket into the chicken horizontally and fill the pocket with a heaping spoonful of the veggie mixture. Press the edges of the chicken together to seal in the filling.
  4. Repeat with the other chicken.
  5. Cook in the oven for 30 minutes at 400 degrees or until the chicken is fully cooked.
  6. Serve with salsa, sour cream, and guacamole! Enjoy!!
