My love for chicken and Mexican food continues this week!
Here is what you’ll need to make the fajita stuffed chicken:
(1 Tbsp.) olive oil, for the veggies
(1) pepper, diced
(1) onion, diced
(1 tsp.) salt
(1 tsp.) pepper
(4 ounces) cream cheese
(1/2 cup) shredded cheddar cheese
(2) boneless chicken breasts
(1 tsp.) salt
(1 tsp.) cumin
(1 tsp.) garlic powder
Salsa, sour cream, and guacamole for serving.
- Preheat the oven to 400 degrees. Heat the oil in a pan over high heat. Cook the peppers, onion, salt, & pepper until soft and slightly caramelized. Transfer the cooked veggies to a bowl.
- In the same bowl, mix in the cream cheese & cheddar cheese, stirring until evenly incorporated. Set aside.
- On a cutting board, slice a pocket into the chicken horizontally and fill the pocket with a heaping spoonful of the veggie mixture. Press the edges of the chicken together to seal in the filling.
- Repeat with the other chicken.
- Cook in the oven for 30 minutes at 400 degrees or until the chicken is fully cooked.
- Serve with salsa, sour cream, and guacamole! Enjoy!!
