HOMEMADE SOFT OREOS

These are a must if you love Oreos or Whoopie Pies! Super soft and melt in your mouth. I also froze a few and love that option as well, give it a try 🙂

INGREDIENTS:

Chocolate Cookie

  • 1 1/2 cups all-purpose flour
  • 1/2 cup cacao powder
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 salt
  • 1/2 cup unsalted butter (room temperature)
  • 3/4 cup cane sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla
  • 2 Tbsp milk

Filling

  • 1/2 cup unsalted butter (room temperature)
  • 1 1/2 cups powdered sugar
  • 2-3 Tbsp heavy cream or heavy whipping cream
  • 1/2 tsp vanilla extract
  • pinch of salt

DIRECTIONS:

  1. Preheat oven to 350 degrees (F). Line cookie trays with parchment paper.
  2. In a large bowl, whisk together the flour, cacao powder, baking soda, baking powder, and salt. Set aside.
  3. With a stand or hand mixer, cream together the butter with sugars. Add the egg, vanilla and milk. Mix completely.
  4. Add the dry ingredients to the wet ingredients and mix completely. The dough will be thick.
  5. Scoop a Tbsp of cookie dough and round it into a ball with your hands and place it onto the lined cookie sheets a few inches a part.
  6. Use the bottom of a measuring cup (or anything with a flat surface) to press the balls half way down.
    • To prevent them from sticking – grease the bottom of the measuring cup.
  7. Bake at 350 degrees (F) for 5-6 minutes, until baked through. Let cookies set for 3-4 minutes before transferring to a wire rack.
  8. For the filling, with a stand or hand mixer, beat the butter on medium speed until smooth.
    • I have not tried it, but I’m sure a cream cheese frosting filling would be tasty as well!
  9. Add in powdered sugar and mix on low speed at first and then medium speed and continue mixing for another 1-2 minutes until the mixture starts to come together.
  10. Add in the heavy cream, vanilla extract, and salt. Continue to mix on medium/high speed for another minute until everything is combined.
  11. Use a knife to spread filling evenly onto one cookie half. Top with another cookie. Repeat until all cookies are paired. Store leftovers in an airtight container. Place in the freezer if not eaten within a week.
