TB’s Kitchen | White Chicken Enchiladas

Today, I wanted to share one of my husband and I’s favorite meal! It’s not only easy to make but it tastes SO good!

Here is what you’ll need to make the enchiladas:

  • (5) Soft Taco Shells
  • (1 cup) Shredded Chicken
  • (1 cup) Cheddar Cheese
  • (1 Tbsp.) Butter
  • (1 Tbsp.) Flour
  • (1 cup) Chicken Broth
  • (1/2 cup) Sour Cream
  • (1/2 jar) Green Chillies
  1. Preheat oven to 350 degrees. Grease a 9×13 pan.
  2. Mix chicken and 1/2 cup cheese. Roll up in tortilla and place in pan.
  3. In a sauce pan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat medium heat until thick and bubbly.
  4. Stir in sour cream and green chillies. Do not bring to a boil.
  5. Pour over enchiladas and top with remaining cheese.
  6. Bake 22 minutes.
